Juicy Italian Meatballs

Ingredients

2 cups crumbles

1 cup broth

1 tbsp soy sauce

1 tbsp Worcestershire sauce

1 tbsp liquid smoke (if you have it!)

1 tsp Montreal steak sauce

1/2 tsp onion powder

1/2 tbsp garlic powder

1 tbsp nutritional yeast

1/4 cup vital wheat gluten

1 egg (or replace with 1 tsp psyllium husk, ground chia seed, or ground flax seed + 3 tbsp water)

1/2 cup bread crumbs

Directions

1. Add broth to crumbles. Mix well. Let sit for 5 min, stirring occasionally.

2. Pour in soy sauce, Worcester sauce, and liquid smoke. Let sit for 5 more min, stirring occasionally.

3. Add Montreal steak sauce, onion powder, garlic powder, nutritional yeast, and a pinch of pepper. Mix well.

4. Add vital wheat gluten and mix for about 3 minutes.

5. Add egg and bread crumbs and mix well. Shape mixture into small meatballs.

6. Heat a frying pan on medium heat. Add a thin layer of vegetable oil.

7. Add meatballs to frying pan, cooking each side until browned. Turn the heat to low and cook for 5 more minutes.

8. Enjoy with marinara sauce over noodles or zoodles, or in a sub. Top with parmesan and fresh basil!
