Thai Larb Lettuce Cups

Ingredients

2 cups crumbles

1 cup broth

2 tbsp soy sauce

1/2 tsp onion powder

1/2 tbsp nutritional yeast

1 tbsp coconut oil or canola oil

1/4 tsp cayenne pepper

1/4 tsp smoked paprika

1/4 tsp sugar

2 green onions, chopped

1/4 red onion, chopped

2 tbsp fish sauce

2 tbsp lime juice

3 tbsp cilantro, chopped

3 tbsp mint, chopped

Directions

1. Add broth to crumbles. Mix well. Let sit for 5 min, stirring occasionally.

2. Add soy sauce, nutritional yeast, onion powder, and a generous pinch of pepper. Mix for 5 more minutes.

3. Melt coconut oil in a medium frying pan on medium high heat.

4. Add seasoned crumbles and cook until slightly browned, 5-7 minutes.

5. Add cayenne pepper, smoked paprika, green onions, red onion, fish sauce, lime juice, and a generous pinch of salt. Cook for 2 more minutes.

6. Remove from heat and chill (just a few minutes in the freezer!)

7. Top with cilantro and mint and enjoy! Eat as-is or serve on lettuce cups with a lime wedge.


Extra Tips: Add fresh corn, fresh basil, or chili peppers in step 5 or as toppings for some added flavor. Serve with sticky rice.
