Not-Too-Sweet Granola

Ingredients

1 1/2 cups crumbles

1/2 cup rolled oats

1/4 cup almonds, chopped

1/4 cup walnuts, chopped

1 tbsp nut butter, creamy

1/4 cup honey or maple syrup (1/2 cup for sweeter granola)

2 tbsp coconut oil

1 tsp vanilla extract

1 tsp cinnamon

1/2 tsp sea salt

1/4 cup chocolate chips

Directions

1. Set oven (or air fryer) to 300°F.

2. Whisk together coconut oil, nut butter, honey or maple syrup, vanilla, and spices until smooth.

2. In a large bowl, combine rolled oats, crumbles, almonds, and walnuts.

4. Combine wet ingredients with dry ingredients and mix thoroughly.

5. Press mixture into a 1-inch thick layer on a parchment-lined baking sheet.

6. Bake for 15 minutes (or 8 minutes in air fryer). Stir the granola, and bake an additional 15 minutes (or 8 minutes in air fryer), until golden brown and crunchy.

7. Mix chocolate chips into hot granola until they begin to melt, then let cool.


Extra Tips: Mix in coconut flakes with the dry mixture, or add craisins after baking.
