Vegan Salsa Verde Soup

Ingredients

1/2 cup crumbles

2 tbsp olive oil

12oz jar of salsa verde

2 cups veggie broth

4-6 cloves garlic, peeled and minced

1 16oz can white beans

1/2 cup cilantro, chopped

1 tbsp ground cumin

Pinch of crushed red chili pepper

Salt and pepper

Optional toppings: shredded cheese, tortilla chips, cilantro

Directions

1. In a stockpot, lightly brown your crumbles in oil. Add garlic and cook until fragrant.

2. Add salsa and broth.

3. Mix in beans, cilantro, cumin, and red pepper flakes. Simmer for 15 minutes.

4. Add salt, pepper, and additional spices as desired.

5. Spoon into bowls and add toppings. Enjoy!


Extra Tips: Add a dash of liquid smoke or smoked paprika for a deeper flavor.
