Loaded Nachos

Ingredients

1 cup crumbles

1 cup water or broth

1 cup chipotle in adobo sauce

5 cups tortilla chips

1 cup cheddar cheese (shredded)

Chopped chives

Pinch of salt

Your favorite hot sauce

Directions

1. Add water or broth to crumbles. Mix well. Let sit for 10 min, stirring occasionally.

2. Meanwhile, add the adobo sauce and chipotles to a saucepan, and put over a medium heat.

3. Add the crumbles to the chipotle sauce, then bring to a simmer. Cook for 10 minutes, then set aside to cool slightly.

4. Arrange the tortilla chips on an oven-safe pan, then top with cheddar cheese.

5. Broil for 2-3 minutes, until cheese is melted on top.

6. Top with cooked crumbles, hot sauce and chopped chives.


Extra Tips: Add sour cream and guacamole!
